Who This Tea Is For
This tea suits drinkers who want a fruity, honeyed tea with a layered flavor profile. On the nose, expect ripe pineapple skin, warm honey, and sun-dried grass. In the cup, the flavor is smooth caramelized fruit layered with honey and soft dark fruit notes, carried by a full, rounded body. The finish is distinctive: a cooling wintergreen aftertaste, and the liquor itself steeps a deep ruby-amber. If you are looking for a light, delicate, floral, or vegetal cup, this richer, honeyed profile will likely read as more than you want.
Brewing Specs, Translated
This tea is set up to be brewed three different ways, each with its own leaf ratio, water temperature, and timing.
| Method | Leaf and Water | Temperature | Time |
|---|---|---|---|
| Gongfu | 3.5–5g per 180–250ml water | 200–212°F (93–100°C) | 1.5–2.5 minutes for the first steep, adding 15–20 seconds per infusion across 3–5 re-steeps |
| Western | 1 tablespoon (about 3.5g) per 8 oz cup | 200–212°F (93–100°C) | 2–3 minutes |
| Cold Brew | 5g per 600ml (20 oz) water | Refrigerated | 8–10 hours |
Gongfu-style brewing uses short, repeated infusions, adding time with each round; western-style uses one longer steep; and cold brewing trades heat for time, steeping in the refrigerator for 8–10 hours.

I've always found black tea boring — just Assam or English Breakfast. Taiwan Ruby Black tea from DAE Tea is on a completely different level. The tropical pineapple aroma from the Hong Yu No. 18 cultivar is 100% real — no flavoring, no additives. And the cooling wintergreen finish is the most unexpected and delightful thing I've experienced in a cup of tea. I brew it without milk and it's perfect.
I ordered Pineapple Ruby Black because I was curious about Taiwan No. 18 tea and it exceeded every expectation. The tropical pineapple aroma hits you the moment you open the bag — and it's completely natural, which is extraordinary. Brewed western style it's smooth and sweet, brewed gongfu it gets deeper and more caramel-like. Cold brewed overnight it's the most refreshing iced tea I've ever had. Incredible.
I'd read about Sun Moon Lake tea and the Hong Yu cultivar but never tried it until now. DAE Tea's Ruby Black is everything the description promises — tropical, smooth, naturally sweet, with that distinctive cooling finish. The deep ruby color of the liquor is stunning. I drink it every morning now instead of coffee — the caffeine is enough to wake me up and the flavor is so much more interesting.
I bought the Pineapple Ruby Black as a gift for my tea-loving dad and tried some before sending it. Immediately ordered a 60g pouch for myself. The naturally tropical flavor of Taiwan No 18 tea is unlike any black tea I've encountered — bold and smooth with a pineapple sweetness that needs no sugar or milk. My dad called it the best tea he's ever had.
I'm an oolong person who's never loved black tea, but Ruby Black converted me. The tropical sweetness and smooth body are so different from malty Assam — it's almost more like a very robust oolong. The wintergreen cooling finish is fascinating and unique. Cold brewed it's exceptional. Great loose leaf tea from Sun Moon Lake.
I've tried many black teas but nothing comes close to the Ruby Black's cooling wintergreen finish. It's completely natural — from the Hong Yu No. 18 cultivar — and it makes every sip feel refreshing rather than heavy. Combined with the tropical pineapple aroma it's the most interesting black tea I've ever had.
Hot brewed Ruby Black is delicious but cold brewed overnight is extraordinary. The tropical pineapple notes become so vivid and clean — the most naturally refreshing iced tea I've made at home. Taiwan No. 18 is a genuinely remarkable cultivar. This is my summer staple from now on.
I've been trying to reduce coffee and Ruby Black has made that so easy. The caffeine level is perfect — enough to wake me up without the anxiety. And the naturally tropical flavor makes it so much more interesting than any coffee I've had. The pineapple aroma every morning genuinely makes me happy.
The story of DAE Tea's Ruby Black coming from a third-generation Sun Moon Lake tea maker really comes through in the quality. The slow oxidation and careful processing are evident in every cup — smooth, complex, naturally tropical without any harshness. This is what single-origin Taiwanese black tea should taste like.
